Sometimes, one just wants to make an assload of shrimp for dinner.

Because sometimes, one finds them on mega-sale at Harris Teeter while one is on vacation with one’s family (and one’s bestie, duh).

Sometimes, one will make a mild batch and a regular batch, and serve the mild batch to those in one’s family who do not love the spice.

Sometimes, one will think that SHE is a lover of the spice.

Sometimes, one’s mouth will burn like THE FIRE OF A THOUSAND SUNS.

But all the time, this one will love it.

Firecracker Shrimp

Adapted from The Pioneer Woman

Serves 4

x

Gather:
wooden skewers
1 pound shrimp, peeled and deveined
2 tablespoons sriracha
2 tablespoons olive oil
1/4 teaspoon salt
2 teaspoons sugar
2 cloves garlic, minced

Prepare:
Submerge wooden skewers in a shallow dish of cold water. Let soak for at least 20 minutes.

Combine all ingredients in a large Ziploc bag, then add shrimp and marinate for 20 minutes to 2 hours. Skewer shrimp and grill until shrimp have just turned opaque, 1-2 minutes per side (shrimp will continue cooking off the grill). Serve immediately.

NOTE: For a mild version, use only 1 teaspoon of sriracha instead of 2 tablespoons.
